Ingredients:
1 med. Yellow onion
8 Baby Yukon Gold Potatoes
Rib eye steak 14-16 ounces
8 button mushrooms
Extra virgin olive oil, 1/3 cup
1/3 cup balsamic vinegar
Fresh rosemary chopped to 3 tablespoons
2 minced garlic cloves
Salt: 1 1/2 teaspoons
Fresh ground Black Pepper, 1/2 teaspoon
4 skewers
Instructions:
If you are using a thin-cut steak, cut it into 16 pieces. For a thick-cut, cut the steak in 8 pieces. Add 1/2 teaspoon of salt and 1/2 tablespoon of pepper. Place the mushrooms and steak in a large mixing bowl. Stir in the garlic, rosemary and olive oil. Cover the plastic wrap with a towel and refrigerate for 30 minutes to two hours.
Add enough water to the large pan so that it covers by an inch. Bring water to a rolling boil, and then cook the potatoes for 5-7 minutes until they are barely tender. Drain and put aside. Cut the onion into four pieces.
Add a steak piece, a potato and another steak piece to the skewer. Add a piece of onion, then another steak, a piece of potato, another steak and another mushroom to the skewer. Repeat the process with all remaining ingredients and skewers.
Lightly oil the grates and heat a grill on medium high. Add the kababs to the grill and cook for 5-6 minutes each side, turning every 3 minutes. By: [email protected]
